Chili has to be one of the easiest recipes to make in a crock pot. Very little chopping is involved. My 89-year-old granny said that all you need are the following ingredients:

1 lb ground beef
1 chili brick (Edmonds chili brick -sold in the frozen foods section)
1 can of tomato sauce – I used a larger can
1 can of chili beans
1 onion – chopped
1 Tbsp chili powder

Dump all ingredients in crock pot – cook on high for about 5 hours. I would open the crock pot occasionally to break apart the brick and the ground beef.

I like to server over spaghetti noodles – Steak and Shake Style. Top with more chopped onions and grated cheddar cheese.

I’m sure some people would argue with me but I don’t see how there is much of an art to cooking chili. How can there be enough of a differentiation in different types of chili that chili cook offs even exist? My parents used to have a chili cook-off in their office. Think about the afternoon of gas in that place!

My chili turned out great. My 5-year-old nephew gobbled it up. I’ve been eating it for the past 3 days.

4 and 1/2 stars? I think that is a stretch. But that is what Allrecipies.com rated this recipe.

While it was very easy to make and I love getting vegetables in my crock pot creation, I don’t know if I would make this again. Perhaps it would have helped if I had peeled the potatoes and used more ripe tomatoes. The problem with this recipe is that the best tomatoes are available in the summer but the crock pot is more of a fall/winter cooking appliance.

One side note… I had been told that chicken does not do well in a crock pot but this chicken (which I literally took out of freezer and dumped into the crock pot) turned out so tender and moist.

I love pea soup. My paternal grandmother used to make it for us when we were kids. I remember how it smelled walking into her house.

What I didn’t realize, at the time, was that her addition of hot dogs to the pea soup was not standard practice. I learned this in an embarrassing fashion when I ordered it at a nice restaurant and then asked if there were hot dogs in the pea soup. Of course my whole family laughed at me.

So they don’t put hot dogs in pea soup – but when I make it I still do.

My pea soup varies in quality. Sometimes it burns, sometimes the peas don’t ever fall apart. I thought that making the pea soup in a crock pot might solve some of the inconsistencies in outcome.

For my first crock pot cooking attempt – I made this pea soup from a recipe I found on All Recipies:

http://allrecipes.com/Recipe/Slow-Cooker-Split-Pea-Sausage-Soup/Detail.aspx

I had to make a couple of substitutions. I didn’t have any bouillon cubes so I used chicken broth instead of water. I ran out of room in the crock pot so I had to leave a few cups of liquid out and then mix it all in after I finished cooking it.

Reviews from family were good. Critiques were that it needed some salt and pepper. The consistency was excellent – no burning – I won’t make pea soup any other way.
